Instructions

  1. Make the drizzling sauce; mix mayo, sweet chili sauce, siracha, lemon juice to to taste. Can add a pinch of sugar if not sweet enough
  2. Marinate the shrimp with white pepper, salt, and pinch of MSG
  3. heat cooking oil in sauce pan, wok, or skillet
  4. Make the batter batter by whisking sweet rice powder with water in deep bowl until you get a pancake batter consistency. Do not over whisk. Dredge the shrimp in batter
  5. Slowly fry in batches, no more than five at a time, flip when golden, about 2 minutes on each side, remove from pan with slotted spoon. allow oil to drain off by placing on slotted baking rack, or paper towels as you cook your batches. You want as most of the oil to be drained off as possible so that you get a crispy, crunchy shrimp.
  6. Plate shrimp and drizzle with sweet bang bang sauce
  7. Garnish with cilantro. If your partner accidentally buys parsley instead of cilantro, you can use that too!
